Water-packed tofu is great for stir-fries and grilling. If drained properly, it absorbs loads of flavor while cooking. Draining a container of tofu may seem like a no-brainer, but it actually involves more than just pouring out the excess water. Start by making a cut in the package and drain the excess water. Remove the block of tofu from the package and lay it on a stack of about eight paper towels and place another stack of paper towels on top of the tofu. Then place a heavy pot or stack of plates on top and leave it there for five to 20 minutes. This will press out the water and allow the tofu to absorb more flavors while cooking.
