Watercress and Mushroom Salad Recipe Ingredients: Balsamic Vinaigrette (see recipe below) 4 1/2 cups (2 bunches) loosely packed watercress, large stems removed (washed, dried, and chilled) 10 to 12 large fresh mushrooms, cleaned and thinly sliced Cherry Tomatoes 1/2 red onion, thinly sliced Preparation: Prepare Balsamic Vinaigrette; set aside until ready to serve. In a salad bowl, combine watercress, mushrooms slices, cherry tomatoes, and onion slices. Toss with Balsamic Vinaigrette and serve. Balsamic Vinaigrette: 1/2 cup good-quality balsamic vinegar* 1 tablespoon soy sauce 2 tablespoons honey 2 cloves garlic, minced Crushed dried red pepper to taste 1/2 cup extra-virgin olive oil In a medium bowl or food processor, whisk together balsamic vinegar, soy sauce, honey, garlic, and red pepper. Add olive oil in a thin stream, whisking until emulsified.
