We, Negrenses, celebrate cinco de noviembre because it was the day when We attained freedom from the Spaniards by bluffing them into surrender with fake cannons and rifles made of bamboo and nipa stalks! Haha! Despite our patriotic pride there is no denying the more than 300 years of Spanish influence in our culture and cuisine-- for breakfast today, celebrating Negros Day by serving up two dishes --first, an authentic negrosanon dish eaten with lots of steamed rice and served with spicy tomato/onion/cilantro salsa -fried tanguigue pinamalhanan on a bed of onions; second, an authentic Spanish dish --croquetas de jamon serrano to dip in some roasted salsa de tomate con chile. Coffee for today: Marios barako con leche with scalded milk-- Dont we just love being Spanish Negrenses?
