We both came home exhausted tonight and almost ordered take-out. When I was visiting my parents this weekend, I discovered a box of books that I had stored there that I couldnt pack and bring on my move to Oregon. I took back a couple of cookbooks and made an extremely simple recipe and had a fresh meal in about 30 min. I was also able to use fresh basil from my own garden which was a huge plus. I give you: Lemon Spaghetti. I made my own chicken with capers, fresh mushrooms, olive oil and salt and pepper. Perfect, light, Fresh summer meal.
