We had a package of ground turkey that had been in the fridge for two weeks, so it had to be used right away. Fortunately, we found that ground turkey lasts longer in the refrigerator; it was fine, and not spoiled. We finally hit on the idea of using it to make sloppy Joes. I started out with this recipe -- allrecipes/recipe/sloppy-joes-ii/ -- but it quickly veered off into something a little different. First of all, the recipe called for ketchup, and I dont keep ketchup in my fridge. So, I put together a quick ketchup substitute, and was satisfied enough to write it down for the files section: https://facebook/notes/cast-iron-cooking/quick-ketchup-substitute/724614284289076 Meanwhile, the ground turkey needed to be seasoned. Ground turkey by itself is bland, and herbs and spices are necessary to make it tasty; so to that, I mixed in two eggs, a half cup of bread crumbs, parsley, oregano, and some grated Romano cheese. (Thats based on an Italian meatball recipe.) And while the sloppy Joes recipe called for chopped green pepper and chopped onion, I only had red pepper and red onion; so that was all chopped up for the dish. So, with these substitutions, the Lodge cast iron wok was heated up, and I mixed the recipe together, including the additional ingredients in the original sloppy Joes recipe. The recipe said to simmer the dish for half an hour to reduce the liquid; but, both the ground turkey and the ketchup substitute had far less liquid than a traditional ground-beef-and-ketchup mix. So it was all done after only about fifteen to twenty minutes in the wok. And, it was...pretty darn good. :)
