We had a question from a customer yesterday, why do our egg yolks stand up so tall compared to the eggs I buy at the co-op that were laid the same day? I thought I would share the answer after I did some researching this morning. It is basically freshness. But they were laid on the same day! Well when an eggs bloom (the eggs natural shell covering that preserves freshness) is washed off with water, the pores in the shell let air in. This degrades the egg faster, more specifically breaking down the proteins in the egg and the yolks are flatter. I would assume larger producers who supply your co-op need to use egg washing machines to clean their eggs because of scale. They usually apply oil based coatings after washing to try and emulate an eggs bloom. At our farm we use dry cleaning methods to keep as much of the eggs bloom intact. And we do not put an oil coatings on our eggs.
