We had left over homemade tomato passata (rustic tomato sauce) so we made homemade pasta and meatballs. Do you put lemon zest in your meatballs? You should 🍎🍎🍎🍷🍴🍋🍋🍋 PASTA 200grams 00 grade flour 2 eggs 3 fingered pinch of salt Mix together till combined, wrap in glad wrap and leave in fridge for 15 mins. We used a hand use pasta machine. Place pasta in salted boiling water with a dash of olive oil to stop the pasta sticking, cook till al dente. MEATBALLS 1 garlic clove finely diced 1 shallot finely diced 500g beef mince handful curly parsley finely diced Zest of 1 lemon 1/2 grated carrot 1 egg Salt and pepper to taste 1 tsp dried oregano 1 tsp dried thyme 1 tsp dried sage 200g diced lardo (optional) 50g fresh breadcrumbs (optional) Sweat off diced garlic and shallot. Add to the remaining meatball ingredients and combine well. Roll your meatballs with oiled hands and set aside in the fridge for 10 mins to set before browning them off and cooking them in a pan with a little oil. Once meatballs are cooked add tomato passata, and heat through. Add cooked pasta to the meatballs and sauce, (always add your cooked pasta to your sauce to finish, not the other way around) stir through, plate up, garnish with cheese, season and finish with a drizzle of good quality olive oil.
