We have another delish recipe from our trainer Mary to help you stay on track during this winter season! We hope with the Thanksgiving holiday approaching, this can be an early week meal! Yummy! Tomato/Avocado/Mozzarella Salad Makes : 3 servings Serving Size: 1 cup Amount per serving: -Calories 195 -Total Fat 14g -Cholesterol 13mg -Sodium 137mg -Total Carbohydrate 9g -Protein 7g Ingredients: - 2 cups grape tomatoes (cut in halves) - 1 avocado (cubed) - 2 ounces part-skim mozzarella cheese (cubed) - 1/8 cup pine nuts - 4 basil leaves (chopped) - ½ tablespoon white truffle oil - garlic salt to taste Directions: 1. Toast pine nuts on pan over medium heat until golden brown 2. Combine all ingredients together in bowl with lid 3. Toss gently to mix ENJOY!
