We have some packs of organic diced mutton from Nancarrow Farm this week (& I think next week too). They are 400g packs at £6 each. Mutton Stew 600g diced mutton, 2 tbsp tomato puree, 100ml Red wine, 2 tbsp red wine vinegar, 400ml chicken stock, 2 bay leaves Sprig of thyme, 5 carrots, a small celeriac, a small swede, 1 medium onion, 4 cloves of garlic, mash potato to serve Preheat the oven to 140C. Lightly coat the mutton in seasoned flour. Put the mutton in a large pan with a little oil and cook until well browned all over, add the tomato paste and carry on browning for a further 2 minutes. Pour in the red wine vinegar and stir well getting up all the bits stuck to the pan. Then add the wine and cook until until reduced by half, add the chicken stock and bring to a simmer. Add the thyme and bay leaf, and put in an oven proof dish with a tight fitting lid and put in an oven for an hour. Meanwhile dice the vegetables into 3cm pieces, and peel and roughly chop the garlic, fry for 3 minutes in a little oil, add to the meat after it has had its first hour’s cooking and carry on for another 2 hours or until the meat is very tender. Check the seasoning and keep warm until you are ready to serve.
