Todays soup is Cajun Red Beans and Greens with Andouille. Saturday dinner specials: Appetizers Roll Your Own Country Chicken Tacos- Dry rubbed chicken sautéed with roasted sweet corn salsa, sweet peppers, onions, and asparagus then sprinkled with Romano cheese. Served with a trio of sauces: Creole honey mustard, sriracha-avocado ranch, and sundried tomato pesto. Flour tortillas and Romaine lettuce wraps on the side. 10 (Make it vegetarian and substitute mushrooms for chicken.) Steamed Mussels- A pound of Prince Edward Island mussels steamed in white wine with grape tomatoes and basil-garlic butter. 10 Entrees Braised Rabbit- Two hind legs of Durham Ranch rabbit braised in a caramelized onion-paprika-white wine sauce. Served over mashed potatoes with roasted Brussels sprouts and marinated carrot julienne. 25 Quackers and Cabbage Rolls- A pan-roasted breast of Maple Leaf Farms duck and a cabbage roll stuffed with braised duck leg meat, rice, and paprika. Served with mashed potatoes and a sweet and sour tomato-ginger sauce. 21. Limited Supply Grilled Striped Marlin- Firm, dense, mild marlin fish served over bay scallops, peppers, onions, and redskin potatoes in saffron sauce. Topped with rouille and garnished with an herb flatbread crisp. 20
