We just brought in some East Coast Black Sea Bass! Black sea bass has a mild, fresh, somewhat delicate flavor and a tender but firm texture. This is a fish rarely found here in Texas, so we went ahead and butterfly cut some to produce the following recipe: Provencal Scented Black Sea Bass Serves 2 Ingredients: 2 Butterflied Black Bass 1 Tablespoon Chipotle Avocado Oil 1 Tablespoon Garlic Avocado Oil Sea Salt and Cracked pepper to taste 1 Cup of Flour 1 Teaspoon Rosemary Fine Chopped 1 Teaspoon Thyme Fine Chopped 1 Teaspoon Oregano Fine Chopped 1 Teaspoon Parsley Fine Chopped Clarified Butter for cooking Directions: 1. Rub both avocado oils over your black bass fillets evenly and season with sea salt and cracked pepper. 2. Combine the flour with the rosemary, thyme, oregano, and parsley. 3. Dredge the fish in the flour mixture. 4. Heat your sauté pan to a medium high heat. 5. Cook the black bass in clarified butter for 3 minutes on each side, starting with the flesh side and then flipping. 6. Remove fish, serve and enjoy!
