We probably all heard the expression, you are what you eat but did any body actually think what that state means? Literally, if you choose unhealthy fat and carbohydrates, you will be unhealthy. Lets talk a minute about fat. The structure of fat is a chain of carbon atoms linked together by single bonds and filled with hydrogen atoms making it very stable and solid at room temperature. i.e butter cheese ,coconut oil and fatty meats. While a monounsaturated fat has one double bond in a specific position i.e omega 3 has a double bond in the third position and omega 6 a double bond in the 6 position. They are unstable and therefore liquid at room temperature and have more flexibility than a rigid saturated or trans-fat. Okay, if you are still with me this is what happens next. Our cell membranes, or the barriers that protect our cells is made up of a fat wall. (we are made up of trillions of cells) The more unhealthy fat we eat, the thicker, less flexible the wall to communication inside the cell and the more formation of early pre-cursor hormones that are pro-inflammatory. The receptors on the surface of the cells also become more resisitant. So by choosing, walnuts, olive oil, fish oil, flax seeds, fish, grass fed beef the more your body produces protective chemicals that fight inflammation, the very risk factor for all diseases. So start by eating health fats mono and poly but avoid poly 6 (omega 6) such as vegetable oils and improve your balance of omega 6 to omega 3 today. Low fat diets work not because they reduce saturated fats, but because they reduce omega 6 fats.
