We rolled into Jackson Wyoming fairly late and by the time we got to Trio for dinner, we decided we would share a few appetizers and a dessert. The appetizer special was Grilled Caprese featuring local heirloom tomatoes, house-made mozzarella, and a balsamic vinegar reduction sauce. The house-made bread was wonderful. The Watermelon and Prosciutto Salad featured compressed watermelon, shaved prosciutto, pea shoots and a hibiscus gastrique. I am not sure how watermelon is compressed, but I would like ALL my watermelon compressed from now on! For dessert we tried what our top-notch waiter called the best dessert in Jackson. We actually arent sure he bragged enough about the Lemon Meringue Ice Cream Pie! Why no more pictures? We were so hungry we forgot to take them! Maybe we should go back again before we leave.
