We shucked 10 bags of oysters today. Worked 10 hours. This batch that we picked up on Saturday is even better than last week. Look at the size of some of them in the pix..We actually do not want the really big ones..and of course not the very small ones. We want that medium size oyster that everyone wants on the half shell.. I am finding out that the only way people here in Fiji know how to eat oysters is raw...There are hundreds of ways to cook oysters. Over the coming days I am going to put up some fantastic recipes . My Dad used to make an incredible oyster stew..I am hoping my sister has the recipe.. I will check.. Now let me explain....Unless you have tried oysters somewhere else in the world..these oysters will not be what you expect. The oysters sold and used in restaurants here are farm raised and frozen on the half shell..They are a very poor representation of what an oyster should taste like..The frozen oysters are actually freeze dried.. The chef adds water before cooking and they plump back up....sound tasty...? Our oysters have spent their life in the ocean.. They are wild. We shuck them and put them in a plastic container like the rest of the world.. They come in various sizes.. They are not cookie cutter oysters.. The taste is out of this world.. We do not wash these oysters. That is the worst thing you can do..We do keep the water that comes from inside their shell to use to rinse them off.. They ARE as they came for the ocean.. Not homogenized pasteurized or soaked in fresh water to make them blow up larger..You are eating a natural product.
