Canapés Served in the Drawing Rooms Asparagi alla Tsarina Here on Arran we are lucky enough to have some of the best smoked salmon in the country, courtesy of Creelers’ smokehouse. Here we serve it wrappped arond a bundle of fresh asparagus, lightly steamed and served with a rich parmesan and smoked salmon cream sauce laced with vodka Served with home baked bread. Tonight’s choices are Black Olive and Pesto Rolls or Rosemary and Cranberry Granary Loaf followed by Courgette and Apple Mint Soup A light and summery soup made with fresh courgettes and apple mint from the potager served with fresh Arran cream Lamb with Rosemary and Redcurrants The last of the redcurrants have been liberated from the fruit cage much to the annoyance of the peacocks, who see it as their own personal larder, and we have used them to make a rich rosemary and redcurrant sauce to accompany prime fillet of prime Scottish lamb baked and served on carrot and sweet potato mash together with potatoes baked with cream and garlic, and seasonal vegetables followed by A Bachelor’s Pudding All the flavours of autumn on a plate!
