Wednesday Afternoon Projects at Stages today. This is a time when we test ourselves in different aspects of cooking to keep the idea of constant learning alive. Todays theme: uncomfortable this is when each of us must prepare something utilizing a technique(s) were not comfortable with. We train to be competent all-around cooks, this helps. 1st to present: Will Myska, technique: fillet a flat fish. 2nd to present: (intern) Justin Bradstreet, technique: vegetables only. 3rd to present: me! Technique: I have to draw out my dish and the guys plate it. I hate pre-drawing plates! 4th to present: John Flintosh, technique: dessert. Here we go chefs! Push!
