Week 14: Meal Idea: Twice Baked Potatoes: Potatoes are a staple in our house. Not only are they cheap but they are also versatile. When we have leftover baked potatoes I turn them into twice baked potatoes. When we have left over mashed potatoes I just make twice baked mashed potato casserole. The flavors blend so well together! Plus it is super easy start to finish with unbaked potatoes. Twice Baked Potatoes 5 large baking potatoes 1 cup chopped cooked bacon 1 cup pepper jack cheese 1 cup Parmesan cheese 1 large tomato 1 cup chopped cilantro 1 cup sour cream 1 cup peach salsa Scrub the potatoes and pierce several times with a fork. Bake at *375 for 40 minutes. Let rest for twenty. Then carve out the potatoes and place their pulp in a large bowl. Add the cream, salsa, bacon, pepper jack cheese, cilantro and stir well. Then fill the empty shells. Add the tomato to the top, then the Parmesan cheese. Bake at *350 for 15 minutes, till the cheese is melted. Let rest 5 minutes and devour! Enjoy! When things happen in the world it is okay to feel anger. Yesterdays event at Fort Hood, Texas, raised a surmountable amount of anger in me. I felt so confused/pissed/angry/irate/enraged as to how someone could kill another. Then I realized it is not my place to fully understand why negative things happen, but it is my place to add just a little sunshine to the world. The anger melted away and now it is pure sadness for all involved. Be someones sunshine today, please for me! Be Blessed. What a Blessing!~ Organization Tips: Entertainment Center: Starting to find new things to purge and clean. What is something you spend a part of your day in front of? For us it is our entertainment center. However this area has become a beacon for extra accumulated stuff. Cards, pictures, toys, tools, remotes, you name it is ends up there when I pledge the coffee table. So today look at yours and see what has another home and what can find a new home! FREE SPACE! It is a freeing experience!~ Exercise Idea: Knee Highs: Doing T25 this week I was extremely challenged with silly knee highs. They make me have to tinkle. I am determined to get them right and enjoy them! Basic knee highs, you need to stand still with your feet hip-width apart. Pull your right knee towards your chest and keep it there for 3 seconds. Now move it back to the original position and do the same gesture with the left knee make sure you do several repetitions. It is a fun way to get a quick workout in and a fun way to be goofy! When you enjoy the work you do, you also enjoy the results more!! So fun!~ Outdoor Activities: Water War: When was the last time you had a water war? Yesterday was a high of *86! Felt so great just laughing with them.. What a nice day to entertain six rambunctious kids! They filled buckets and broke my good plastic bowls, but they were making memories. Get outside and have a blast! Dont forget to break out that sunscreen too! Stay active!~ Stay Blessed Yall!!~
