Week 32: Meal Idea: Mexican Chicken Soup: I love quick and easy meals that come together randomly, are healthy, and taste so good the kids ask for thirds. Plus it freezes well for those nights you need a quick and enjoyable dinner. 1 red bell pepper 1 yellow bell pepper 1 orange bell pepper 1 large vidalia onion (all onions would work great) 2 tablespoons butter 2 teaspoons cumin 2 teaspoons chili powder 4 cups shredded chicken (leftover chunks, etc) 2 cans chicken broth (4 cups homemade stock) 1 can rotel tomatoes Toppings: cheese, avocado, tomatoes, cilantro, sour cream, olives In a large stockpot melt the butter over medium heat. Chop the onions and peppers into nice sized chunks. Add to the butter and saute for five minutes. Add the seasonings and chicken. Give it a great stir. Add the cans of broth and tomatoes. Stir and let heat to a low boil, then dish it into a nice bowl and top to your hearts desire. This soup is great with cheesy jalapeno bread slathered in butter! Easy peasy! Enjoy! I am a human with emotions that at times run rampant. Words can heal or injure a person. Words can cause a great divide or combine two ragged edges together. How are you helping others? Are you helping others grow or slashing them at the knees. Asking God for help with your tongue is so necessary and yet seems so impossible. Do not dwell on the reckless but chose to be wise! Use your mouth for uplifting purposes!! Be Blessed. What a Blessing!~ Organization Tips: Socks: Alright. Yall know my deep love for socks. Whether they match or not, as long as they are the same length I will wear them. With the hubby at field training I had some free time to finally go through my sock drawer. I may have an obsession with crazy socks. I found 17 pairs with holes in the toes, heels, seams. I however do not have an excuse to go sock shopping (booo) because I have 30 pairs of great ones. Oh and they are all mated. That wont last long but now I have space for the upcoming holidays! Do you have an overrun sock drawer? Clean it out!! :-0 FREE SPACE! It is a freeing experience!~ Exercise Idea: Cardio Burst: I am trying to get quick bursts in this week while getting the house in order since school is a few short weeks away. So try this three times a day for a week and tell me if it doesnt help you feel better! 40 jumping jacks, 30 crunches, 20 squats, and 10 push-ups. It is a quick burst of exercises that burns 100 calories! How fun and quick!! When you enjoy the work you do, you also enjoy the results more!! So fun!~ Outdoor Activities:Fall Vegetable Garden: This North Carolina weather makes for a great fall garden. Squash, spinach, onions, tomatoes, cilantro, they all grow so quickly with a little love. Find out what is in your area that grows well and let your hands get dirty! Get outside and have a blast! Dont forget to break out that sunscreen too! Stay active!~ Stay Blessed Yall!!~
