Weekend Weber Recipe... Barbequed Steamed Veges These are anything but bland! I pack them full of flavour and the Weber does the rest. Beetroot - I sliced the beetroot into quarters but not the whole way through. Add 5 tbs balsamic vinegar and 3 tbs olive oil, oregano and salt. Wrap in 2 layers of alfoil. They take about an hour - for a large beetroot - about 250gms. I put the wrapped veges on a trivet on a convection tray. Outer burner only (for the Family Q). Red onion - peel the onion and quarter but not all the way through. I stuff it with butter and rosemary and wrap in 2 layers of alfoil. They only take about 20 mins on the trivet. Sweet potato - scrub the sweet potato and the prick about 10 times all over. While still wet rub with a mix of dried chilli, ground cumin salt and pepper. Wrap in alfoil and pop onto the trivet. they take about 45 mins - depending on the size. Mine were pretty small. They are great with a squeeze of lime when done. Fennel is also great with some white wine and butter. Happy cooking. Jenny
