Weekly Rite Bite: I was running late for work this morning and needed to grab something quick for breakfast! I looked in the refrigerator and discovered I had a leftover fish taco from when I ate out the other day. While a fish taco isn’t the most traditional thing to have for breakfast, it did remind of how we don’t necessarily have to have “breakfast” foods for breakfast. Our bodies can’t tell the difference between foods, only the nutrients it receives! As long as we are getting some carbohydrates (from grains, starchy vegetables and/or fruits), protein (from fish, poultry, meat, eggs, tofu, beans, nuts and nut butters), and fat we will be good to go! The most important thing about breakfast is the fact that you are supplying your body with energy at the start of your day! Need some variety in your breakfast? Try one of these non-traditional breakfast foods: - Baked potato with cheese (and maybe fruit on the side) - A slice of pizza (preferably with veggies on it) - Pad Thai- it’s got grain (noodles), veggies, protein (egg, etc.) and usually prepared with a little oil…what a great balance! - Smoothie Popsicle- blend fruit and yogurt together (like you were making a smoothie) then pour in popsicle molds and freeze! - Grilled cheese or PB & J (with a side of fruit) - 4-5 Sushi (plus fruit) - Rice and beans (brown rice makes it even better) with a slice or two of avocado Until next week, Bethany the KSU Dietitian
