Well, I fibbed just a little bit. I actually didnt have only bacon for dinner. I made a chopped salad with lots of bacon! It was very good. I start with organic greens. I prefer the baby greens that have kale...they are usually labeled as power greens...then layer it with 1/2 of a small chopped Asian pear, crumbled blue cheese, a small handful of pecans, a little bit of chopped red onion, and lots of crumbled bacon. Pour a low sugar/no sugar dressing over it and toss. The one thing I do miss is eating a lot of fruit. So, when I want some fruit...I usually put a little in a chopped salad....it makes a little fruit go a long way in regards to flavor!
