Well, I have been waiting to post this...why?? Because I am all about comfort food......MY ALL TIME FAVORITE,, Chicken Fried Steak...homemade gravy with homemade mash potatos and Corn on the Cob!!!! Chicken Fried Stead 1 large round steak 1 1/2 cups all purpose flour 1 tablespoon garlic 1 1/2 teaspoons salt 1 teaspoon pepper 1 cup shortening 2 large eggs 1 tablespoon milk Gravy 4-5 tablespoons left over flour reserve 4 tablespoons shortening 2 1/2 cups milk Potatos 4-5 large potatos Peeled, cut and quartered 2 quarts of water 1/4-1/2 cup butter salt and pepper to taste Corn 4 corn cobs 2 quarts water 1/4-/1/2 cups milk Start potatos first, put in water, cook until done then mash with butter salt and pepper Put shucked corn into 1 qt pan with milk and let boil on med low for 10-15 minutes Heat oil in preferably 6-8 inch cast iron skillet to 325... Pound steak with a saucer plate...dredge in egg that has been beaten with milk, and then dredge in flour, let sit for about 5 minutes....put in fry pan let fry on one side for 3-4 minutes then the other side for 2/3 minutes. When all steak has been fried..pour excess oil with the exception of 3-5 tablespoons reheat keeping as many droppings as possible, add 4-5 tablespoons of flour..stir until all oil is absorbed..add milk..stir. put on med heat, let sit, stirring occasionally...until it boils...then stir until thickened. Then serve......gravy over mashed potatos and steak corn on the cob with butter.....PURE HEAVEN!!!!!
