Well? If you eat mashed potatoes, how do you like them? Fluffy mountain? Creamy and swirly? I like em creamy, and this is what I do: 1. Use only yukon golds 2. peel and slice in circles, not cubes. 1 thick or so. 3. rinse them in a colander before boiling 4. boil in well salted water until soft 5. strain and put through a ricer. You can mash them, too. 6. Heat the butter and cream (only cream) in a saucepan before adding the potatoes. 7. salt to taste. If you want them extra rich, stir in some creme fraiche or sour cream. They come out perfect!
