Well its bottling day already. Or perhaps not for the cider. Similar to callums issue not so long ago, the cider has a sulphur smell, however this is smelt coming from the air lock, and also from the tube as I poured my test sample. It dissipated very quickly. I have experienced this before with similar batches of cider and have dealt with it like a red wine, let it breathe before drinking and its fine. But I wonder if like a stanky beer I leave it to sit on the trub for a bit it might eat up the off flavours? Cider is tough though cos if you miss your bottling date by too much it winds up over dry like chalk, and its already below 1.0, maybe Ill just add some sweetener... Any advice will be appreciated. As for the saison Saaz monstrosity, I have to say Im pleasantly surprised. The taste is initially spicy, followed by passionfruit and lemons, it finishes up vannilla and smoothly bitter, which I think is born largely from using relatively low alpha hops in larger quantities for bittering. This will be one unique beer.
