Well, last night I finally decided to try making Bacon Jam. With a YIAH twist of course! :) recipe i used is as follows; 1/2 kg of bacon, chopped in to roughly one inch pieces. Thick cut is best if you can find it. Two large onions, roughly chopped in to thick squares. 1/2 cup brown sugar. 3/4 cup coca cola (you can also use 1/4 cup strong brewed coffee + half cup water if preferred) Splash of YIAH maple balsamic. YIAH smoked orange, chili and garlic salt. Fry bacon until just cooked but still a bit chewy, a few brown bits are fine but you dont want too many. Using a slotted spoon remove bacon from pan and sit it on some paper towel to drain excess fat. Add onions to remaining bacon fat in pan and cook on low heat until soft and translucent, about 10 mins. Add brown sugar and use wooden spoon to ensure onions are coated, allow to cook on low heat until onions are caramelized (about 20 mins.) add coke or coffee mixture to pan and bacon. Leave pan on low heat and allow liquid to reduce stirring occasionally until it reaches a jam like consistency, stir in balsamic, allow to cool slightly and add salt to taste. Store in a jar/container in the fridge. Will keep for up to a week. Use at room temperature on toast/bruschetta, burgers (like bacon relish!) or anything else you can think of.
