Well the Taste of Home stuffed Zucchini recipe was a hit! I would definitely make it again. I of course modified It to my liking though. I like spicy so I used HOT sausage but Id use mild sausage if it was for guests or kids! Ill post the recipe link in the comments but here are my substituted ingredients and slight cooking changes. Stuffed Zucchini with spicy sausage *1 16oz package ground spicy Italian sausage *4 zucchini (around 2 1/2 lbs) cut in half and scooped out, only HALF the pulp chopped and saved *5 mushrooms chopped *1 small shallot chopped *1 red pepper diced *1 heaping tsp minced garlic *1 1/2 tsp Italian seasoning *fresh ground pepper *15 oz can Italian style tomatoes crushed up *2 TBS butter *2 TBS flour *1 1\4 C milk *1 tsp mustard *1/2 C shredded Asiago cheese *1/2 C Panko breadcrumb *1 tsp dried parsley I followed the instructions except I cooked the meat and veggie ingredients together in some olive oil. I then added tomatoes , and simmered. Filling will be juicy. I boiled zucchini 4 minutes not 2! I used a slotted spoon to spoon up sauce for shells and put extra filling in the holes. After using ALL the cheese in the sauce I added Panko n parsley. Baked Per instructions and then Broiled 2 minutes till brown. I served over rice as the pan will have juices youll want to pour over your rice!
