One of the hottest trends this year: kale salad. In fact, raw kale dishes are popping up all over restaurant menus. And once you have it, you’ll understand why. It’s got a nice, chewy bite and none of the bitterness that turns some people off of leafy greens. Lacinato kale (also known as Tuscan or dinosaur kale) is one of the mildest-tasting varieties. If you’ve tried raw kale at home and found the leaves too tough to stomach, you’re probably skipping the most important step: a massage. That’s the secret to eating this powerhouse veggie au naturel. Massaging kale leaves in a dressing helps tenderize them. Here’s how: Thoroughly wash and dry your kale. Next, remove the stems and tough center ribs, reserving them for later use (a smoothie, perhaps?). Tear the leaves into small, bite-size pieces, or chop them into thin, confetti-like strings. Place the kale in a bowl and add your dressing (olive oil and lemon work nicely). Using your hands, massage the dressing into the kale until all of the leaves are fully coated. Let the mixture marinate for 15 to 30 minutes, which will give your kale leaves time to soften (and you plenty of time to wash).
