Weve all done it, run through Whole Foods and grabbed a cooked chicken and then thought, hmmmm what to eat it with? I am NOT a fan of Whole Foods prepared foods, its awful to put it politely, but they do an okay job with their roasted chickens. Corn has gotten a bad rap because of the poisonous GMO glurk including HFCS that food manufacturers have created to force feed cattle and humans. But organic, non-GMO corn is really a delicious carb to serve with any protein. This corn recipe takes ten minutes or less to make and is smashingly good. You can serve it with any leftover protein you have in the fridge. Tonight I served it with leftover meatballs and it was divine. South of the Border Corn Makes 2-3 servings 3 tablespoons butter 1 red bell pepper, seeded and chopped 1 orange bell pepper, seeded and chopped 2 jalapeño peppers, seeded and chopped 1/2 cup chopped cilantro One 16 ounce bag organic frozen corn 2 teaspoons sea salt black pepper, to taste Melt the butter in a medium sized saucepan over medium-high heat. When the butter is starting to bubble, add the peppers and cook, stirring for 2 minutes. Add the corn (no need to defrost) and the cilantro and stir, cooking for about 4 minutes until corn is defrosted and hot. Season, and serve. xxxx
