What do you get when you cross a Bounty Bar with a Cherry Ripe & add a healthy twist? THIS slab of decadence! It’s gluten free, nut free, dairy free, vegan, with no added cane sugar (but I promise it’s still delish!) Can anyone think of a good name for it? Making it is easy-as! Truly :) You’ll need: 200g coconut cream (I actually used low-fat but obviously the full-fat version is going to be tastier) 1 cup desiccated coconut 2 tsp vanilla essence 1 large mashed banana 2 tbsp rice malt syrup/agave/coconut syrup/date syrup –whatever natural syrup you prefer ¼ cup frozen berries of your choice 2 tbsp pure fruit/no added sugar jam (I used cherry but anything berry-based would also work) *100g dairy free dark choc Optional – zest of one lime To make: Mix together coconut cream, desiccated coconut, vanilla essence, mashed banana and syrup thoroughly. Grease or line a shallow baking try (approx. 25cm x 15cm x 3cm). Melt half the dark chocolate and create a thin film of chocolate across the base of the baking tray. Scatter the frozen berries across the top of this melted chocolate layer. Spoon coconut mixture over the top of the chocolate/berry base and roughly smooth over. Dot spoons of the jam over the top of the coconut mixture and swirl gently into the coconut mixture (don’t worry about being too neat or particular, leaving the top a little textured actually looks really nice with the melted chocolate!) Melt the remaining chocolate and drizzle over the top as you desire. Freeze for a minimum of three hours before slicing. Grate fresh lime rind over the top for a bright and zesty finish! *To modify this recipe & make it a little healthier, you can use less chocolate. The slice will still hold together once frozen without it. Just create thinner swirls of chocolate on top with it :)
