What to do with the Turkey bones/ carcass... you know that thing your left over with the day after!.... Here is what you do with it:).. you make soup!!!. Pull ALL the meat off the bones.. every last itty bitty scrap and save it for later. Next.. take a LARGE pan.. like a spaghetti pan or I use a large 5qt stock pot (but I also boil 3 turkeys worth of bones hahah). ANYways!!.. Take bones. dump in pan.. fill pan most of the way with water .. maybe leave an inch or so at the top so you dont boil over. Season a little.. throw some minced garlic in there, little bit of salt, I like parsley and oregano.. pepper. BOIL for like .. 2 hours... Remove all bones from broth. I have found the best way to do this.. take a spaghetti strainer and put it over another similar size pan.. and dump pan into strainer.. all bones go in strainer.. all broth goes into other pan.. walla. Now... this is important. Refridgerate the broth.... all the icky FAT will solidify on the surface. Once it solidifies... scrap the white stuff off.. and throw it away! Now the rest of the broth in pan.... you can separate it into containers and freeze to save for later... Or I just go straight into making soup with it. Heat it back up on the stove.. can add a little more water to it if its really thick. add some more garlic or what ever other flavoring you like. you can now throw in diced carots, potatoes, celery, bits of onion, what ever vegetation you prefer or lack there of... even diced tomatoes. once they are cooked. Take that turkey meat you saved up.. shred it into tiny pieces.. toss it on. Now in a separate pan.. make some elbow macaroni (do not toss it in the soup as it will get MUSHY>> EWWW... )..... Once its done.. put noodles in a bowl.. pour soup over noodles. and you have home made turkey noodle soup that is actually really healthy. OR.. Rice.. I love dumping this soup over rice....
