When I started cooking at 5am this morning I had planned on making a delicious batch of 4-Cheese Muffins. I say had planned because when I discovered I was out of buttermilk and substituted it for The Gourmet Greek Greek Yoghurt I also discovered that the moisture contents of the two ingredients were completely different — instead of a batter I had a soft scone like dough. Since the difference between success and failure is perspective I carried on, this is the outcome Should-Have-Been-Muffins 4-Cheese American Style Breakfast Scones — this is definitely a repeatable mistake! Should-Have-Been-Muffins 4-Cheese American Style Breakfast Scones Ingredients - 150ml sunflower oil - 1 large egg - 250ml Gourmet Greek Yoghurt made up to 450ml with milk - 500g self-raising flour - 1 tsp English mustard powder - 140g mature farmhouse cheddar, grated - 1 small red onion, finely chopped and fried till tender in a little butter - 2tbsp rough chopped parsley - 45g parmesan grated Heat oven to 180C and spray a large cookie tart with non-stick spray. Whisk the oil, egg and yoghurt. In a mixing bowl, mix the flour, 1 tsp salt and mustard powder, then stir in the cheddar, parsley, onions and half the Parmesan. Use a large spoon to gently stir the mixture until it has the wet ingredients into the dry – don’t overmix, about 25 seconds should do. A soft dough will form, gently pull it together, dont knead it. On a lightly floured surface flatten the dough to about 5cm thick sheet, square off the edges as best you can. Then with a sharp knife cut the dough into even blocks, so that when it bakes the pieces are easy to separate. Scatter with the remaining Parmesan and bake for 25 mins. If when you get to the stage where you should have a dough - you have a batter just spoon it into greased muffin tins and bake till golden. I scattered half the scones with good feta halfway through the baking and some herbs at the end, imagine those would go well with eggs! Let me know if you get the same results!
