When restaurants has a low volume of customers they get a trend. Then they have to schedule for that trend. They make changes to fix a bad trend and still can only schedule a little above a trend. lets say you have 10 people in a restaurant in an hour that gives you enough for 0ne server and one cook. 20 ppl add one more of each. Do you see this trend. okay now lets say you have a trend and you schedule for that trend and you just got 30 more cust a hour then your trend. service will be a little slow and mistakes will be made. we all are human.
