When talking about Pizza, Its impossible not to mention Sorbillos dream-like masterpiece. A poetry, not a simple pizza, which perfectly combines Campanian traditional tastes. Before definitely leaving Naples to go to China, I had to choose among the best pizzerias in my city, the one which could have given me the best souvenir ever, and undoubtedly, I opted for Sorbillos. There is no hesitation in adfirming that is my favourite but also the best Neapolitan pizzeria. I have travelled all over the Europe (the word, soon) and I have never abstained from plunging in local gastronomical culture, however, it is quite difficult to find a place which can be really regarded as a food travel destination, Sorbillo is one of them. I have come across French and English people going away sadly from Tribunali street during the summer because of Sorbillos summer closure. Tourists strolling around come in the downtown with the basical idea to get to Sorbillos and eat Ginos sublime margherita, they gather outside the restaurant and line up in the endless queue: everything to please stomach and taste buds. After waiting for the name in the list to be shouted out, the door of the Heaven open to the audacious faithful. Two floor crawling with clients attest the succesful appeal of the place. A simple organisation, fast service, efficient and hasting waiters. 10 minutes and the dish come out from the “kitchen” The oversized dough gives off a mouthwatering fragrance of baked every time it reaches the table. This time, my pizza was an “Adriana” ( every pizza has its own name) also known as Lasagna, an harmoniously balanced fusion of ricotta, mozzarella cheese, tomato and basil. The simplest the best. Apparently what Bruno Barbieri would have called a “mappazzone” (because of the not elegant visual impact, due to the fact that Sorbillos pizza is so big to come out from the dish), this GIANT doesnt need to be well-plated, its taste is EVERYTHING: from the first bite to the last one, an explosion of simphonies resounding into the mouth and into the head. Not a word, because the pizza itself doesnt need any comment. Silence, between me and my boyfriend while we were cuddling every single piece of the not crusty (because pizza is not crusty nor crispy remember!) well-risen dough. The velvety ricotta spotted on the surface of the pizza matched the lightly salted mozzarella and hugged the succulent sauce. Despite the size, Sorbillos pizza never bore, it asks to be eaten and every bite is like the first one. Once the pizza is finished you would ask another one! The final piece is always the best, I tasted it as it was the last breathe of my life, caressing it with the point of the tongue and grasping the flavour of every ingredient, fresh mozzarella, sublime tomato sauce and delicate ricotta then, mixed them up, I reached the wholeness with the universe. In the end, I was totally ravished by the fullfillment of senses I had experienced.
