When you cook thick stews like Kurma ,Sambhar etc.,try boiling the vegetables in the masala sauce giving it just a whistle in the pressure cooker(on a Medium high flame) .This time-saver trick incorporates the flavour into the vegetables which reflects the taste of the sauce in the vegetables wonderfully.However this is for vegetables that just need a whistle like carrot,potato,drumstick, beans,yellow pumpkin,peas etc.,vegetables like beetroot and veggies that need more time to cook can be boiled separately and then added to the sauce.The way you do it is ,start with the seasoning first ,then the spice powders/masala paste/purees,now the vegetables and you give them a nice stir,you add the required water -bring it to a mild boil and just one whistle will perfectly force the sauce`s aroma and flavour into the vegetables and cooking the veggies nice and soft. Note : This trick needs careful understanding of your pressure cooker, some cookers cook quickly -some take time depending on the usage. Some cookers need to be switched off before a whistle for perfectly cooked vegetables.Be careful with the whistle because more often than not, it leads to over cooking and it might end up pureeing the vegetables.
