While pancakes may not be the most healthy breakfast option, you can improve their contents with a small alteration. On top of that, it only takes two (and a half) ingredients to make them. Heres what youll need: • Two large, ripe bananas • Four 4 eggs • Optional: 1/4 teaspoon of baking powder Just mix this all up together thoroughly (with a hand or standing mixer if you can) and cook in a pan like you would with any pancake. Having made several variations of flour-less banana pancakes, I believe youll appreciate adding the baking powder. Without it, they dont rise much and can feel a bit like banana eggs. That said, theyre still tasty and very quick to make. Dont expect your standard pancake and you might be pleasantly surprised.
