Whisking up some Salted Caramel Sauce for my mini cheesecake! I ❤ caramel, do you? Salted Caramel Sauce: - 1 cup caster sugar - 1/4 cup unsalted butter, cubed - 60ml water - 1/2 cup thickened/heavy cream - 1/2 tablespoon sea salt flake Method: 1. Heat sugar and water over medium heat, whisking constantly to dissolve sugar. 2. Once mixture comes to boil, stop whisking and let it simmer till dark amber colour. 3. Swirl pan occasionally and wait for the colour to change. 4. Once it reach dark amber colour, whisk in butter until melt and blend in. Remove from heat. 5. Lastly pour in cream and whisk immediately till combined. 6. Stir in sea salt flake and transfer mixture to a glass jar to cool then store in the refrigerator.
