White people who take issue with the term person of color are dubious at best. The term has been around for a long time, and is one that is preferred by many people of color over other terms like or similar to minorities which is often described as degrading. The term has issues, there is no doubt about that. A common one is that its often used more out of laziness or simplicity than actual care or concern. It can also be used as a form of erasure: there are many instances where media is specifically anti-black and that brand of racism should be labeled anti-black, not anti-people of color, which erases the presence of specifically anti-blackness. So the terms got issues, but it is currently considered by most academic and activist authority figures who are in the communities and aware of the topic as the primary term to describe non-white people. While challenges of that from those communities are of course necessary to further progress western language away from its white supremacist roots, it is best that all cues are taken from the communities in question and not white people.
