Whiting Florentina Ingredients ; 1 pound Whiting fillets (about 4 fillets) , fully thawed 2 to 3 tablespoons butter, melted Preheat oven to 375. Arrange on buttered, heat proof baking dish. Season with salt and pepper. Drizzle with melted butter. Bake 5 to 10 minutes. Begin preparing Florentina sauce while fish is baking. Sauce ingredients 3 tablespoons butter 3 tablespoons flour 1cup milk 1/2 cup cream Salt and pepper t t 1/4 teaspoon nutmeg 1/2 cup grated parmesan cheese 1tablespoon butter for topping Cooking directions Melt butter in saucepan. Add flour and stir with wire whisk until blended. In another pan, heat milk and cream until boiling and add all at once to butter and flour mixture, stirring until smooth. Season with salt and pepper, and nutmeg. Put spinach in the empty pit and add 1/2 cup if sauce. Heat thoroughly, but do not boil. Spoon onto a heat proof baking dish and arrange fish in top. Stir half of the cheese into remaining sauce and spoon over the fillets. Sprinkle with leftover cheese and dot with butter. Bake fish for additional 10 minutes or until heated through.
