Wheat contains amylopectin A, which is a starch molecule that is highly fattening and causes high spikes of insulin. It has been linked to fatty liver disease, insulin resistance and metabolic syndrome. Wheat contains these things whether it is raw, sprouted, organic, grass-fed, pasture-raised, etc. Signs of wheat sensitivity include gas/bloating, diarrhea, constipation, heart palpitations after eating, headaches, fatigue, anemia, low vitamin D, acne, eczema, rash, nerve pain and the list goes on and on.
