Wildtree Chicken with 40 cloves of garlic: Separate appx 40 cloves of garlic. Leave the skins on. Cover with water and bring to a simmer. Simmer for 10 minutes. Meanwhile, heat a heavy skillet with about 2-3 tbls grape seed oil. Get the pan screaming hot. Generously season your chicken with Adobo blend. Put your chicken in skin side down. You may have to do this in 2 batches, depending on the size of your pan. Brown the skin for 10 minutes then, flip and brown the bottom for an additional 3. Put the browned chicken on a plate. Once your garlic is done, drain, cool, and peel it. Put it in the pan that you just browned your chicken in. Cook the garlic until its nice and brown, about 4 minutes. Add a pound of sliced mushrooms and continue cooking until the mushrooms are tender. Now, deglaze your pan with ONE OF THE FOLLOWING: 1/2 cup of balsamic vinegar (this is what I used), Marsala wine, or white cooking wine. Poor all of this into a large baking dish. Arrange your chicken on top so that the crisped skins are NOT submerged in the liquid. Cover and bake for 30 minutes. Remove the cover and bake an additional 15 minutes. Then make some rice or noodles and steam some veggies. Dinner. Done.
