William Wallace lived hard & died harder, a traitors execution in London on August 23, 1305. He was toasted as we dined this evening. The meat treat of the night was oxtail with three different cuts of pork: jowl bacon, steaks, and chops. To begin, I chopped vegetables. Celery and onion went into a pot with butter and brought to sizzling. The oxtail was added with a little olive oil and the meat and vegetables were braised together. Next went in chopped cabbage, kale, carrots, then finally mushrooms. Water went in to cover it all, and salt and pepper, and it was brought to a full seething. The chops were introduced, the pot was lidded, & the heat reduced to simmer. In a cast iron skillet, I begin to cook the jowl bacon, as I needed the fat for frying. When done, the bacon was left to cool and drain on a towel. We happily ate some, then the pieces went, where else, but into the pottage. The steaks had been packed in olive oil and a pepper blend at my butchers market. I minced a bulb of garlic, began frying it in olive oil, and when fragrant, laid the steaks on top and then seared all sides. I tossed in a healthy shot of honey mead during the searing! The steaks went into a chafing dish, then in the oven. It was all good. The oxtail was rich & fatty in its stew, the bacon was as good as bacon can ever get - I highly recommend the jowl cut - and all the vegies were just right. The steaks were wondrous; you could taste the browned garlic and the bacon, and the mead gave it a slight glaze. It was a fine meal, and we had flat bread, pickled cauliflower, olives, & goat cheese as well. My potus was vinegar syrup while my guest drank ale. Cheers!
