Wine Sippit #6 - Time to crush the grapes! This can be done a few ways. The grapes can be de-stemmed and crushed. Another method is a whole cluster press. The whole cluster is curushed. Then there is the amount of pressure to use. A soft crush or first press will provide pure juice with little room for undesired compounds that can come from the stems, seeds, and skins. This is usually reserved to make the best wine. Then there is a second and third press, which obviouslyuses more pressure and squeezes out more cmpounds like acids that may be undesirable. If not adjusted in the process, the wine may not taste as good. That is why you pay different amounts for different wines. That $6.99 bottle is most likely a 2nd or 3rd press.
