With Mother’s Day right around the corner, Dave Achatz shares his favorite meal his mom, Irene Achatz, used to make! “I loved her pot roast! It was so delicious because of the oven-brown potatoes and carrots! She would braise the pot roast, add onions, and roast for a while. Then she would add raw potatoes and carrots and put in a little bit of water but not enough to cover them, cook that for a while longer and then baste the vegetables in juice. The vegetables would turn a nice golden brown and taste delicious! My Uncle Rink usually came over to cut the meat for us since he was a butcher. His family, which was like a small army, would often join us for dinner so there would be 18 people total! The highlight of the meal was taking a piece of homemade bread and spreading the bone marrow from the roast on it! We always enjoyed the meat with ketchup and I used to smash the potatoes and carrots together! Everything was homemade and we considered it a special treat to have anything store-bought like canned peas or corn! We always froze our own vegetables from the summer so we could use them all winter. Our potatoes and carrots were stored in a bin of dirt in our basement for the winter so we had to dig them out to cook with them. And we always had dessert…either cake or pie! Then when I was 12, my parents opened Achatz Catering and we had to fend for ourselves since they worked all the time! We ate a lot of French fries!” What is your moms famous dish?
