With a couple of sick kiddos, we’ll be ringing in the New Year at home tonight, but that’s not going to stop us from enjoying this sweet and salty Kettle Corn, a new family tradition. This is such an easy recipe and I hate to admit we’ve eaten it for dinner more than once this year. I know you’ll love it, and you won’t be able to stop with just one bite. Ingredients: ¼ Cup Vegetable Oil ½ Cup (good quality) Popcorn Kernels ¼ Cup Sugar ½ Teaspoon Salt 1. In a large pot with a tight-fitting lid, heat ½ cup of oil over medium-high heat until the oil sizzles. (I like to put a few kernels into the oil while heating, that way when I hear it pop, I know the oil is ready.) 2. Add ½ cup of popcorn to the hot oil, shake around and then pour sugar over kernels. Cover and shake the pan until the popping slows down, about 3 minutes. 3.Remove from the heat and toss with ½ teaspoon salt. Happy New Year, Yall!
