With my Birthday on the Majesty of the Seas I was honored by Head Waiter Fransisco Orlando at the Chef Table for 6 with a 5 course-wine pairing meal of excellence with Ex Chef Brown from Jamaica and Sommelier Janet MacKenzie. 1) Chilled lobster, Scallop and Shrimp Salad with Campari grapefruit jelly, baby lettuces and micro greens. - Stellenbosch Sauvignon Blanc. 2) Soup Duo pencil asparagus consomme, carrot-lemon bisque & a crab brioche. - La Crema Pinot Noir. 3) Fillet of Cod king oyster mushrooms, baby green lentils, celery cream, madeira truffle reduction. Yalumba Y Series Reisling. 4) Seared Beef Tenderloins, horseradish cream, crispy sweet potatoes, caramelized turnips, spinach puree, port wine glaze. Sequoia Grove Napa Cab. 5) Chocolate Creme Brulee, Cherry pistachio financier with vanilla bean ice cream. Errazuriz Late harvest Sauvignon Blanc. IT WAS SUBERB!
