With ridiculously low temps and snow here in East Tennessee, comfort food was calling. Fixed fried plantain...one of my all time favorites. Been decades since I tried fixing it myself. Took me back 26 years ago - my best friend Mila Sheahan lived next door and I was pregnant with Amanda Keech Campbell and loved when Milas Cuban dad, Mr. Lopez would come down from Silver Spring, MD and fix Cuban food or just bring it! They fed Stefanie Keech Stayton and me so much good food!!! Ill never forget it! And I will never forget not being patient enough to let those plantains ripen enough - would bug the heck out of Mila who knew exactly when they were ready! Mine, for the first time ever, was just right tonight! Well worth frying something!
