With some frozen fish (left over from a fishing trip)... I decided to make this yummy fish curry. It was honestly so quick, easy and tasty! Ingredients: 2 Tbs coconut oil 1 Red or white onion finely chopped 3 Cloves of garlic crushed or finely chopped 2 cm cube of ginger grated or chopped 1 1/2 tsp garam masala 1 Tbs of curry powder 1/4 tsp of cayenne pepper 1 tsp mustard seeds 1/2 tsp coriander seeds 1 Can of coconut cream (good quality) 1 Can of chopped tomatoes (preferably organic) Heat oil in a large heavy pan, fry off onion until soft then add garlic, ginger and spices. Fry for a couple more minutes. Add coconut cream and tomatoes and simmer for 5-10 minutes. 5 minutes before serving add 500g of cubed fish (we had snapper). Turn down to the lowest heat and gently poach fish in the sauce. Season with a little salt if needed. Serve with chopped coriander, sliced almonds and steamed leafy greens. If you are more of a mixed or carb type - serve with rice. Enjoy, Rose x
