With still more than a week before Easter, some Alsatian bakeries are already selling “L’agneau de Pâques,” often known in Alsace as Osterlammele, Lamala or Lammele. Baked traditionally in lamb-shaped clay molds made in the Lower Rhine town of Soufflenheim, the rich egg batter yields a kind of pound cake that is usually generously dusted with powdered sugar and given to children the morning of Easter to symbolize purity and innocence. If you don’t have access to an antique split mold with a wire to hold the pieces together, (we’ve seen them in pottery stores in the Route du Vins towns), local grocery stores like Saint-Louis LeClerc sell both the metal and clay, from 18-24€.
