With the never ending anecdotes about Pie and Mash on this site and seeing as I rarely get back to the East End anymore I thought that I would look for a recipe to produce my own. Bearing in mind that this dish was a staple meal for the workers and the poorer people of the East End I find that the recipe that the BBC put online under Cockney Pie & Mash a bit laughable, here is the list of ingredients half of which was never even heard of in the day. For the pastry 250g/9oz plain flour, plus extra for dusting. pinch salt 110g/4oz cold butter, cut into cubes 3-4 tbsp cold water 1 free-range egg, lightly beaten, for brushing butter, for greasing For the filling 1 tbsp olive oil 1 onion, peeled and finely chopped 500g/1lb 2oz beef mince 1 garlic clove, peeled and crushed 6 mushrooms, finely chopped 1 sprig fresh thyme 1 bay leaf 1 beef stock cube 1 tbsp plain flour 150ml/5fl oz red wine 300ml/10½fl oz beef stock salt and freshly ground black pepper For the mashed potatoes 3 large potatoes, peeled, halved 25g/2oz unsalted butter 50ml/2fl oz single cream salt and freshly ground black pepper For the liquor 25g/1oz unsalted butter 25g/1oz plain flour 300ml/10½fl oz chicken stock 25g/1oz fresh parsley, finely chopped 1 tbsp white wine vinegar salt and freshly ground black pepper
