With the recent interest in canning Butter from friends.......I decided to try canning Homemade Butter. The last time I made it .....it was store bought. As the photos show.........the cream is poured into your agitator and mixed up. What you get is approx. 1 quart of Buttermilk, and 2 pounds of Butter. I put the Butter on the stove and brang it to a boil, at this point I add 3 tablespoons of Salt and stir in............meanwhile boiling a ball jar and seal and cap. When Butter boiled and jar was also ready......you pour Butter into jar....carefully. The recipe says to mix or shake the jar up to a point. I shake until it has almost set up, as this makes the final presentation more uniform with hardly any noticeable seperation. Then put in fridge as it says. My Ball jar is Green .......for the curious. After a stint in the fridge .....I will take out and shelf until I use it. :-)
